After learning the ropes in the company of legendary chefs, Nicolas Morelle has opened his own establishment in this pretty village. He works hand in hand with small local producers, devising intelligent, subtle dishes that hit the spot every time, such as trout, horseradish emulsion and organic seasonal veggies.
