The assured, refreshingly understated cooking champions top Irish ingredients, with dishes comprising just 3 or 4 components and allowing each one the room to make an impression. Combinations are refined and well-balanced, and great attention is given to the finer details. The wine list is a labour of love and offers a superb range by the glass.
