The culinary centrepiece of the Wald & Schlosshotel Friedrichsruhe has an elegant style that verges on the opulent. Exquisite details such as fine fabrics, fancy wallpaper and crystal chandeliers are perfectly in keeping with the historical castle. The cuisine, too, is in a classical vein, although given a modern spin by Boris Rommel and his team. Each individual component is precisely prepared down to the smallest detail, as in, for example, the beautifully matured, extremely tender saddle of local venison with a delicate walnut crust and a robust juniper berry jus that is packed with flavour. Choose between two set menus (one vegetarian), from which you can also order à la carte. Friendly and professional front-of-house team. The chef also likes to come out and chat to guests and reveal the ideas behind his dishes, and he even prepares some tableside dishes. The amuse-bouches are served on "plates" created by Boris Rommel himself! The wine list is fantastic – there are some real treasures to accompany the menu. Tip: Have an aperitif at the hotel bar.
