The chef surveyed the tempura of Japan from east to west to teach himself this culinary art. The menu begins with iimushi (mochi rice steamed with toppings) and pureed vegetable soup. Attesting to the chef’s training in Japanese cuisine, tempura items mix the first of the new season with the last of the old season. To achieve a light batter, air is folded in as the batter is mixed. Shrimp is served in pairs: the first for aroma; the second half-cooked to elicit sweetness. In a unique serving pattern, seafood alternates with vegetables.
