There are some local customs and skills that you pick up at home from your family and it is undoubtedly this link which connects chef Juan Aceituno and his grandmother Juana (La Chucha), the woman who passed on her passion for food to her grandson. This downtown restaurant, halfway between the Basilica of San Ildefonso and the bullring, features a main dining room in a contemporary minimalist style. The updated traditional cuisine here, with stunning attention to detail and exquisite flavour, aims to narrate a journey through the chef’s own life experiences, exploring the landscapes of Jaén via threee tasting menus: 'Madre', 'María' and 'Triana'. An interesting detail? The chef is always looking to innovate and evolve, which is why he collaborates with other chefs and usually does an annual internship at renowned international establishments (two good examples are the iconic Les Prés d'Eugénie - Michel Guérard, in France, and Belcanto, run by chef José Avillez, in Lisbon, Portugal).
