Opposite the old port, the chef gives free rein to his unbridled creativity, inspired in particular by trips to Asia and his passion for seafood. The tasting menu ("Plongée en plusieurs paliers") is a genuine ode to the sea, with dishes like tartare of squid and dentex, covered in rice sheet and seasoned with a soy sauce made out of fermented fish and lime juice. The produce is remarkably fresh, the cooking is spot-on and the risk-taking is constant: this is a restaurant that stands out from the crowd!
